(This one is with no egg, but zucchini pancakes on the side…yum!)
I’m in love with this simple and healthy breakfast! It earns its “Superfood” title from everything that tops the toast! The avocado, chia seeds, coconut oil, eggs, olive oil and berries all have so many healthful benefits! Enjoy this breakfast for yourself, or entice your little one with this pretty flower presentation.
Serves 4
1 avocado
4 Strawberries
4 eggs
1 tsp chia seeds
1 tsp coconut oil
4 pieces of bread of your choice
Drizzle of Extra Virgin Olive Oil
Sea Salt
Place eggs in a sauce pan and fill with just enough water to cover them, Bring water to a boil, cover, remove from heat and set timer for 12 minutes. While eggs are cooking, toast bread. Spread coconut oil on the toast. Slice avocado and strawberries. One the eggs are done, rinse with cold water and peel. Slice them into rounds. If doing the flower presentation, place toast on a plate and arrange the avocado in a fan fashion on the toast. with strawberry slices between each one. Place the egg in the middle, sprinkle with sea salt, chia seeds, and drizzle with olive oil.
