Zucchini Pancakes

Grandma Bonnie’s Zucchini Pancakes

1 Cup Flour

2 tsp Baking Powder

4 Eggs

1 tbs Romano Cheese

1/2 tsp Garlic Powder

1/2 tsp Parsley

1/4 tsp Pepper

2  Large Zucchini ( Grated, salted and drained)

Extra Virgin Olive Oil (for frying or for greasing baking sheet if baking)

Beat eggs lightly, add zucchini and then add dry ingredients.

Frying:

Heat a frying pan with a thin coating of olive oil. Drop by tablespoons into pan. Cook about 2 minutes per side, until golden brown. Transfer to a paper towel lined rack or plate and sprinkle with sea salt.

Baking:

Preheat oven to 400 degrees. Brush a baking sheet with olive oil and drop zucchini mixture by the tablespoon onto the baking sheet. Bake for 12 minutes, flip and bake another 12 minutes or until golden brown.  Transfer to a paper towel lined rack or plate and sprinkle with sea salt.
