Sourdough Star Bread

Tower Garden Pesto Star

This is an incredible sourdough brioche star that originated from Pantry Mama’s Recipe. I converted measurements to cups, and swapped out some ingredients to make it my own. What toppings will you add to make it your own?

Cranberry Orange & Cream Cheese Swirl

Ingredients

4½ cups All Purpose Flour

2/3 cup Sourdough Starter

7 oz Milk Full fat, room temp

2 Eggs room temp

7 tbs grass-fed butter, softened

¼ cup maple syrup

2 tsp Salt

Toppings Options: Nutella, pesto, jam, lemon curd, cranberry sauce and cream cheese swirl, coconut sugar and cinnamon twist, marinara sauce and pizza toppings.

1. Add milk, sugar and to a large bowl

2. Now add your sourdough starter, flour and 2 eggs. Mix this into a rough dough. Allow this to sit for around 15 minutes.

3. Next, add the butter and salt and knead until the dough is smooth and elastic. Set it aside to double.

4. Once the dough has doubled, divide it into 8 equal pieces and then roll those out into circles. This will make 2 sourdough stars, so you can make different fillings for each if you’d like.

5. Place the first circle onto a piece of parchment paper and spread it with ⅓ of the topping.

6. Place the next disc on top and spread that with topping. Repeat for the third piece of dough.

7. Then place the fourth disc of dough on top creating a stack.

8. Press it down gently with a rolling pin and then place a jam jar or ramekin at the centre of the dough.

9. Using a knife, cut the dough into 16 equal pieces.

10. Taking two pieces at a time, twist the dough outwards so it spirals around, and then join the pieces back together to create a point. Or if doing a twist, just twist each individual strip.

11. Apply egg wash to the entire star using a pastry brush and bake at 356F for around 25 – 30 minutes until the dough is golden brown.
