This is a perfect , family-pleasing, summer meal! What’s even better is the simplicity in the prep! It takes no time to prepare, and you get the three C’s- cool, crunchy, and creamy to round out your meal. Also, a great vegetarian option is smokey, “Fakin Bacon” Tempeh crumbles.
Add this to your weekly summer meal rotation, and your family will come running to the dinner table!
- 1 package Organic Romaine Hearts, ends cut off and cut in half
- 1 lb Uncured Bacon, cut into 1/2 inch pieces with kitchen shears
- 1 pint Organic Grape Tomatoes quartered
- 1 Cup Mayonaise
- 2 Tbs Maple Syrup
- 2 Cloves Garlic, minced
- 1/2 Tsp Rendered Bacon Fat
- Black Pepper to taste
Heat a frying pan at medium heat, cut bacon into small pieces using kitchen shears, and fry until crisp. Remove bacon and drain on a paper towel.
In a small bowl, combine mayo, garlic, rendered bacon fat, maple, and black pepper.
Chop tomatoes and cut lettuce in half to make a good size for wraps.
To assemble, lay out a lettuce wrap and top with bacon, tomatoes, and a dollop of maple mayo.
