Cowboy Caviar is requested at least once a week in our house! It is so versatile and can be treated as a dip, salad, or stuffing for potatoes or squash. You can easily swap out ingredients that you prefer like different herbs or beans. You can also add things to bump up the heat like jalapeños, or avocado to tone it down. Add some additional protein and you’ve got a fantastic meal!

Ingredients
- 2 (15-oz) cans of black beans drained and rinsed. You can use the equivalent of prepared dried beans. Black eyed peas, navy beans, or cannellini beans work well.
- 1 can organic corn or the equivalent fresh
- 1 organic tomato, chopped or a handful of grape tomatoes sliced (optional)
- 1 organic vidalia or red onion, diced
- 1 jalapeno seeded and finely chopped (optional)
- 1 avocado chopped (optional)
- 1-2 green onions cup, chopped (cilantro is a great addition as well)
For the Dressing:
- A drizzle to ¼ cup extra virgin olive oil or avocado oil to taste
- 1/3 cup apple cider vinegar or fresh lime juice
- 1 tsp garlic powder or 1 garlic clove minced
- 1 tsp honey or maple syrup (optional if you need to cut the acidity of the vinegar)
- ½ tsp smoked or regular sea salt or to taste ( if you like the smoked flavor but don’t have smoked salt, you can substitute smoked paprika
- ¼ tsp black pepper or to taste

🍠🥑🌶🧄Chipotle Avocado Cilantro Lime Dressing/Dip
1 avocado
2 cloves garlic
1/2 cup plain Greek yogurt (dairy-free varieties work well like coconut or almond)
1/4 cup evoo (omit if oil free)
1/4 cup water
Handful of fresh cilantro
1-2 chipotle peppers in adobo (depending on how much chipotle you like!)
Juice of 1/2 a lime
1/4 tsp salt and pepper
1/4 tsp dried parsley
Buzz all ingredients in the blender until completely smooth for dressing. If you would like it chunkier as a dip, just don’t let it get smooth, just pulse it.
- Prick sweet potato all over with a fork, rub with avocado oil and sprinkle with salt and pepper. Cook in the microwave 3 minutes, flip, and another 3 minutes or until fork tender. Airfryer at 400 degrees for 20-25 depending on size, or baked in the oven for about 45minutes (slice in half and place flesh side down for quicker cooking, about 30 minutes) . Remove, slice and stuff with toppings.
