This recipe has been an old stand by in my family, and we traditionally use basil as the herb of choice. This morning, my husband went out and picked some grape tomatoes, cucumbers and parsley from our garden and asked me to make a salad with it. The parsley is the star today! This literally takes 5 minutes to make and gets better as it sits in the dressing, so it’s great to pack for school or work lunches.
*Note about the vinaigrette: traditionally a 3 to 1 ratio of oil to vinegar, but this is so delicious with a nice drizzle of Olive oil and a tad more vinegar.
2 Cucumbers
Handful of Grape Tomatoes
Handful of Italian Flat Leaf Parsley, Basil or Herb of choice
1 Can of Tuna of Choice ( imported varieties packed in oil are a treat!)
Sea Salt Pepper to taste
2 tsp Chia Seeds
1|4 Cup White Balsamic Vinegar or Vinegar of Choice
Drizzle of Extra Virgin Olive Oil
Chop the tomatoes, cucumbers, and parsley and add to a bowl. Add tuna, drizzle with olive oil and vinegar and sprinkle with sea salt, pepper and chia seeds. Mix to combine the flavors.
