In the midst of winter, I need my Summer Rolls!!! They are so fresh and delicious, but also easy to make. I may not feel so good about my rolling skills, but they taste great so I don’t care!
Easy Summer Rolls
1 package of rice paper wrappers
1 lb Wild Shrimp ( I sautéed them for a few minutes in a little evoo and butter and a squeeze of lime)
1 bunch of mint
1 bunch of cilantro
1 bunch of basil
2 carrots sliced into matchsticks
1 zucchini sliced into matchsticks
2 mushrooms sliced
lay out a wet dish towel, and have a shallow bowl with a little water ready. Take one rice paper and place it in the water for about 30 seconds, until it gets pliable. Place the rice paper on the wet towel, and put your filling in the middle. Lift the bottom over the filling and tuck it slightly under. Fold the sides over the middle, and roll the rest of the way.
Thai Dipping Sauce
2/3 cup water
5 tbs fish sauce
3 tbs honey 1/2 of a lime juiced
2 cloves of garlic minced
1/4 tsp ground ginger ( or 1/2 tsp minced fresh)
1/4 tsp cayenne or sriracha (optional for spicy)
