I recently saw a video for Quinoa Toasts, and with the New Year upon us, I’ve been looking forward to lightening up on the gluten!
I tweaked the recipe to get some additional benefits from Chia and Sesame Seeds, but you can add any type you’d like! I can see these Toasts topped with hummus and sprouts, nut butter and fresh berries, smoked salmon, capers, and spicy mustard. The possibilities are endless and delicious!!
Ingredients:
3/4 Cup Quinoa
1/2 cup Water (plus enough for soaking)
1/2 Tsp Baking Powder
1/2 Tsp Smoked Paprika
1 Tsp Chia Seeds
1 Tsp Sesame Seed
1 Tsp Nutritional Yeast (mine also has an Organic herb blend)
1/2 Tsp Garlic Powder
Preheat oven to 450 degrees. Soak Quinoa for 15 minutes in just enough water to cover, in a Magic Bullet, blender, or food processor. Add water and spices and blend until smooth. You may add the seeds and blend or stir them in and leave them whole. Transfer mixture to a baking dish lined with parchment paper, And bake for 30 minutes. If you’d like them to be crackers, just cook longer and keep an eye on them to get to your desired crispiness. Cut into squares or triangles and top with your choice of topping!
