Sweet & Savory Quinoa Bars/Brittle

This is such a delicious and nutritious granola bar/nut brittle recipe. It’s versatile as all of my recipes are! I made it last night with only quinoa and no oats. I used raw cashew and pumpkin seeds, no chia. It was absolutely delicious! 

Ingredients

1/2 cup uncooked, rinsed quinoa (check the package to see if it is pre-rinsed)

1 cup nuts/seeds chopped or whole, whatever you like best

1/3 cup rolled oats

2 tablespoons chia seeds

1/2 teaspoon vanilla extract

1 sachet or scoop Juice Plus+ Complete Vanilla 

1/4 teaspoon sea salt

1 tablespoons coconut oil

1/4 cup pure maple syrup

*Optional for sweet/savory: Add 1/4 tsp Everything Bagel Seasoning, Chinese 5 spice, or Garam Masala.

*Pumpkin Pie Spice would also be a great addition this time of year.

Instructions

Preheat oven to 325 degrees. Rinse quinoa and pat/squeeze dry if your quinoa isn’t pre-rinsed. Mix all ingredients in a large bowl until combined. Spread mixture on a parchment-lined baking sheet.

Bake for 15-30 minutes until golden and crispy. Allow to cool and cut into desired shape/size or break into brittle. 

After baking—This batch had quinoa and oats.
