Super-easy Organic Strawberry Tart (No jello)

I have been in the mood for a strawberry tart for some time now, and this super easy and fast recipe fit the bill!

Crust

1 1/3 c. Organic all-purpose flour

1/4 c. Organic sugar or coconut sugar

1/2 tsp. kosher salt

10 tbsp. melted grass-fed butter or vegan butter

Make crust: Preheat oven to 350°. In a large bowl, whisk together flour, sugar, and salt. Add melted butter and stir until dough forms. Press mixture into a 10″ or 11″ tart pan or springform pan pressing until dough is smooth. Prick all over with a fork and bake until golden, 25 to 30 minutes. Let cool completely.

Filling

• 1/4 Cup organic sugar or coconut sugar

• 1 Cups water

• 2 Tablespoons non-gmo corn starch

• 1 1/2 Quarts fresh organic strawberries

Wash and cut the strawberries into pieces.

Divide out about 1/3 of cut strawberries and put them in a medium sauce pan with the sugar. Put on medium heat and mash the berries with a potato masher.

Mix the cornstarch with the water and whisk together until it is dissolved. Add this mixture to the sauce pan and stir slowly until it begins to thicken and no longer looks milky, about 5 minutes. Reduce heat to low and let this simmer for 10-15 minutes stirring occasionally.

Remove from heat and let it cool for about 5 minutes.

Add the strawberries to the still warm glaze and gently stir to cover all berries with glaze.

Spoon the berries into the crust, and top with fresh whipped cream!

Refrigerate until set, at least 30 minutes
