🥭🥥Quick Thai Mango Sticky Rice🥭🥥

🥭🥥I have been wanting to make Thai Mango Sticky Rice for awhile. I didn’t have the sticky rice, and the store only had Annie Chun’s ready-made sticky rice, so I got it. It made it really easy so I only had to make the coconut sauce and slice the mango! You can make this as a fancy dessert or brunch option and it will come together so fast!

Sweet and Salty Coconut Sauce
1 can coconut milk
2 pinches of pink salt
1/8 cup sweetener of choice ( I don’t like things too sweet but adjust to your preference) You can use coconut sugar, organic cane sugar, monk fruit, stevia, maple, honey, agave, etc)
1 tbs cornstarch or flour mixed into a slurry with 1 tbs water

Bring coconut milk to a low boil, add sweetener and slurry and simmer for about 5-10 minutes until thick and glossy. Add half the milk to your rice, and drizzle the other half over the mango on top of the rice. Sprinkle with toasted sesame seeds and/or salted peanuts.
