This is the perfect summer treat that can be eaten for breakfast, lunch, dinner or as a snack! I’m not the biggest watermelon fan, I know, how Un-American of me! But there is something magical that happens when you add the marinated vidalias, sea salt and mint! I promise, give it a try and see!
1 Mini Watermelon sliced into large circles, then sliced into 8 small “pizza slices”
1/4 of a vidalia onion sliced thin
2 Tbs Apple Cider Vinegar
1/2 Tsp Honey or maple syrup
Handful of walnuts
Handful of Fresh Mint
Mix the vinegar, honey and some of the mint in a small bowl. Slice the vidalia thinly and add to the bowl, and add a bit of sea salt and pepper
. Let vidalia sit in the mixture for at least 5 minutes or longer to marinate. Top the water melon with vidalias, walnuts, and extra mint. If not Vegan, goat or blue cheese would be wonderful on top!
