Easy and Tasty Vegan Meatballs!

I have been on a roll with vegan meat alternatives this week! I made my Vegan Ground Beef Alternative recipe 3 times this week! I made Bolognese, tacos, and tonight I made meatballs for Vietnamese Banh Mi Sandwiches. This is a family favorite we serve on our Family Meal Boards. It’s so much fun eating lots of different things off the board together!

Pasta and Vegan Meatballs!

This recipe begins with the basic version of my Vegan Ground Beef Alternative recipe. Once you have that made, you add the other ingredients and it’s so easy. And I must say while they are baking in the oven they smell so good—- I keep questioning myself—Is there really no meat in there?! Give this a try and I promise you won’t be sorry!

Vegan Meatballs

  • Begin by making the Vegan Ground Beef Recipe
  • 3/4 cup organic Old Fashioned oats (gluten-free if necessary)
  • 1 tbs chia
  • 2 tbs nutritional yeast
  • 3 tbs water
  • 1tbs parsley
  • 1 tbs basil
  • 1 tsp salt
  • 1/4 tsp pepper
  • A few sprays of algae oil or oil of choice (this just helps to brown but not necessary if you are oil-free)

Preheat oven to 400 degrees . After making the Vegan Ground Beef Alternative, add chia seeds and water in a small bowl to gel together for a few minutes. In a large bowl combine the remaining ingredients with the Vegan Ground Beef Alternative and chia mixture. Using a small cookie scoop to measure the mixture, roll into balls and place on a parchment lined baking sheet. Spray with oil and bake for 25 minutes until browned.

Serve these meatballs anyway you would like– traditionally in a non-traditional way with pasta, or like we are tonight with an Asian spin for Banh Mi Sandwiches!
